How do you make olive oil?
The traditional method of processing olives, involved crushing them in large stone olive mills, and separating the oil with a matt press.
Technology has advanced over the years, and now a more efficient and hygenic method of making oil is becoming widely used.
At a modern processing plant, olives are crushed in enclosed stainless steel mills, the paste mixed in tanks and then separated in a centrifuge (also known as a decanter) .
To make Extra virgin olive oil, the quality of the olives must be top-notch, processed within 24 hours of harvest and 'cold pressed' at no higher than 25 degrees celsius.
