Great for cold climates! Fitted to the malaxing tanks, this features allows you to control paste temperature. While low temperatures are ideal for maintaining oil quality, the olive enzymes require a certain amount of heat to do their job - helping release oil from the cells.The Malaxing process:
The olive paste is gently mixed in tanks, providing an environment for the natural olive enzymes to break down cell walls, encouraging oil droplets to release from the paste, and group together.
Processing aids such as enzyme may be used during this stage.
Malaxing tanks are available in several configurations to meet a variety of needs. Optimal malaxing times vary according to the fruit processed.
